Divide the minced beef into 4 equal balls (do not compact them). Heat a cast iron skillet or flat griddle over high heat until very hot. Lightly oil the surface. Place the beef balls on the hot surface and smash them flat with a heavy spatula or burger press. Season generously with salt and pepper. Cook for about 2 minutes until the edges are crisp and browned. Flip, add a slice of cheese to each patty, and cook for 1 minute more. Toast the burger buns face-down in the pan until golden. Assemble the burgers with lettuce, tomato, pickles, sauces, and the cheesy patties between the buns. Serve immediately.
